Hard Work & Quality Food Brings Rewards for Taste Festival Stall
Multi award winner Peter Trioli is thrilled with his success in taking out Best Stall at the Taste Festival and four wine awards for Two Metre Tall Real Ale & Cider and Wursthaus Kitchen.
“Unlike Collingwood we could go back to back! Our success is due to plain hard work. We get up at 7am and go to bed at 1am, in between we spend a great deal of time at the Taste, organising, arranging staff while preparing massive amounts of food to arrive every day and coping with food production-plus having the energy to keep going for hours on end.”
“Yes, we are far busier this year and it’s due entirely to the improvements of the Brasserie. The Taste Festival’s Food and Beverage Coordinator Paul Cullen talked me into moving out of PWI and into the Brasserie last year and I have to say it has been a great success.” “At last year’s event, we held several discussions and looked at the shortcomings of the Brasserie, not enough chairs and people not knowing where to go. In fact, I ended up running around trying to spirit away a chair or two wherever I could find one and that wasn’t easy with more and more people coming.”
“At the end of the Taste Festival last year we decided we needed greater seating capacity, so this year the Council moved the Taste Theatre to Salamanca Lawns and added extra seating capacity in the Brasserie, opening it up to get the cross breeze and views across the Cove. People also feel much closer to the water and this adds atmosphere. Patrons clapped the arrival of yachts as they neared the wharf. The wooden floor also gives a ‘yachty’ feel underfoot,” said Mr Trioli
“Our original concept at the Taste was a big stall in the middle of PWI shed called ‘The Brasserie’. We opted to do an old European style Brasserie because Wursthaus is German-European and having hand-pumped beer from Two Metre Tall Real Ale & Cider is also European.”
“So, when Paul Cullen decided on the Brasserie at the end of PW 1 we were the perfect fit being old European. It all gives a good feel with wooden floors, wooden bars and our patrons really enjoy it.” “Of course, when Paul made the initial suggestion for us to move, I can say in all conscience, we were aware but not alarmed! Obviously when it’s a new idea, there is a need to take a risk and stretch oneself beyond the comfort zone. We went with it and it’s paying dividends. The Brasserie is well and truly working, a really excellent idea and well themed for Taste patrons. Perhaps another major reason for our success is that we’re cooking the food to order that means a short wait because we don’t use a bain-marie, but our customers love what we offer,” Mr Trioli said. The Chairman of the Festivals and Tourism Special Committee, Alderman Ron Christie congratulated Mr Trioli for taking out the Best Stall Award for the second year in a row and the other Festival Award winners.
“Every year the bar is raised just a fraction higher, however the rewards are there to ensure patrons get the best quality,” Alderman Christie said.

Awards in this category were judged by Rodney Dunn owner of the Agrarian Kitchen and former editor of Gourmet Traveller and by Paul Cullen, Taste Festival Food and Beverage Coordinator.
Stall Awards
Best Taste Plate goes to first time entry from the North-West Coast, Cable Station, with their Wagu beef pie and oysters (Brasserie stall #8/9).
Best New Entry awarded to Silver Hill Fisch (Brasserie stall #12).
Best use of Tasmanian Produce awarded to Christmas Hills Raspberry Farm (stall #14 PW1).
Best Stall at the Taste Festival awarded to Two Metre Tall Real Ale & Cider/Wursthaus Kitchen (Brasserie #10/11).
In this section wines were judged by the visiting wine writer from the Melbourne Age, Jeni Port and Tim Goddard, local wine identity.
